Greenville Drive Organization Overview
The Greenville Drive, founded in 2006, is the Minor League Baseball Class-A affiliate of the Boston Red Sox, a relationship that has been in place since 2005. Before the team relocated to Greenville, the team played in Columbia, SC as the Capital City Bombers. The Drive play at Fluor Field in Downtown Greenville - a mini replica of iconic Fenway Park - complete with its own "Green Monster" and manual scoreboard in left field.
In its inaugural season in 2006, the Drive received Ballpark of the Year recognition, beating out all other newly constructed stadiums across minor league and professional sports. In 2008, the Drive's stadium was officially renamed "Fluor Field" after the Drive announced a naming rights agreement with Fluor Corporation - a global leader in engineering & construction. Each year Fluor Field hosts 66 Greenville Drive baseball games and 30-35 amateur baseball games. In addition, under the year-round West End Events brand, Fluor Field hosts the community's highest profile events including Artisphere, Euphoria, Imagine Upstate, and many others. The Drive's contributions to Minor League Baseball and, more specifically, the Greenville community, were recognized by being awarded the John H. Johnson Award in November 2017. This award, given to only one of Minor League's 120 total teams each year, is considered the highest organizational achievement in Minor League Baseball and is based on community commitment, operational excellence, and overall franchise stability.
For over 17 years, Greenville Drive has created a highly visible and widely embraced community engagement platform at Fluor Field, reaching over 1 million ballpark guests and digital followers across the Upstate of South Carolina each year. This broad-reaching platform provides the Drive the opportunity to position itself as a community entity that businesses and community organizations alike can utilize to achieve critical tangible & intangible results. Collaborating closely with the leading corporations, associations and community-based organizations that shape the quality of life in the Upstate, the Drive have formed strategic partnerships that positively impact a variety of critical initiatives. From Education to Entrepreneurism, from Youth Leadership to Healthy Living, and from Regionalism to Workforce Development, the Drive have creatively and continuously leveraged its community engagement platform that is Fluor Field to positively impact these and other key quality of life community drivers.
Furthermore, West End Events is a department within the Greenville Drive that is charged with creating and executing the community's highest profile & most impactful events on a year-round basis, mostly on non-game days. Fluor Field is the home to numerous venues that are capable of hosting events from 10 guests to as many as 7,000 guests. West End Events represents a rapidly expanding department within the Greenville Drive with ample opportunity for growth. A variety of events are hosted at Fluor Field each year, including but not limited to, corporate board meetings and functions, wedding receptions and rehearsal dinners, large community/city events, concerts, philanthropic events, and more.
Position Summary: Executive Sous Chef
The food and beverage experience is a critical aspect of the Drive's business, growing in importance each and every year. Prior to the 2017 season, the Drive completed over $15 million in ballpark renovations, including the addition of various first-class hospitality venues and a state-of-the-art premium services kitchen. The updated and expanded premium services kitchen includes over 1,500 square feet of space and is equipped with top-of-the-line appliances and kitchen equipment. Furthermore, the Drive is creating investing in and constructing a second state of the art kitchen in the current 500 Club. This second kitchen is set to be operational in May of 2023. Alongside the Vice President of Food & Beverage and the Executive Chef, the Executive Sous Chef will help strategically develop menus and execute our best-in-class food and beverage experience on a year-round basis.
As the Class-A affiliate of the Boston Red Sox, the Greenville Drive is primely positioned for success. As the Executive Sous Chef for Greenville Drive, this individual will be responsible for developing menus and ensuring quality food preparation and presentation. Furthermore, this individual will be working alongside the Executive Chef in developing staff, menus, systems of operations, scheduling, ordering product and assisting in other areas. As Greenville, SC is one of the fastest growing cities in America, there is ample opportunity for meaningful customer interactions to help promote the Drive brand and to grow professionally.
Job Overview
The Executive Sous Chef is a critical member of the Drive organization, responsible for overseeing, managing and executing all aspects of the Drive's various special event menus and hospitality food and beverage offerings. This individual will seek to maximize the potential of the Drive's food and beverage experience by positioning the Drive as one of the leaders in the Upstate of South Carolina. The following descriptions are all measures of what success will ultimately look like in this position:
- Food and Beverage Experience
- Responsible for overall management of the premium services and 500 Club kitchen, including supervising activities of the premium services kitchen staff, coordinating hospitality orders with the Director of Catering and Premium Hospitality and the Ticket Sales team, ensuring timely delivery of orders, and managing proper closing procedures of the kitchens.
- Assist Executive Chef in Developing menus for sponsor events, gamedays, and special events based on the direction and input from the Vice President of Food & Beverage, the Vice President of Business Development, and the Director of West End Events, all with a customer-oriented approach. Pricing for these menus in relation to food costs should be kept current at all times.
- Formulate, implement, and administer operational procedures pertaining to food preparation, recipe development, stock rotation, and inventory levels with strong attention to quality and product efficiency.
- Work with Executive Chef to manage order quantities for the premium services kitchen and minimize waste, while simultaneously maximizing food quality.
- Relationship Management
- Develop and maintain a positive and customer-oriented culture among the Drive's premium services kitchen staff to ensure seamless coordination with the overall food and beverage department, as well as the West End Events team.
- Develop and manage relationships with our food providers, alcohol and beverage providers, equipment providers, and other various vendor and customer interactions.
- Hire, train and develop new staff members providing a family friendly work environment while continuing to pursue new innovative processes, while simultaneously maximizing food quality.
- Talent Management
- Lead all staffing needs related to the Drive's premium services kitchen staff, under the supervision of the Vice President of Food & Beverage. This includes direct oversight of the existing staff in addition to appropriately staffing all 66 Drive home games, amateur baseball games, and special events.
- Ensure smooth and streamlined shared resource management across all Drive departments for food and beverage purposes (e.g., Finance/Accounting, Sales team integration, Marketing/Sponsorships, West End Events, etc.)
- Lead the efforts across the organization to teach, develop, and implement strong safety and sanitation requirements and guidelines.
Job Qualifications
- Five years of culinary arts experience after graduation from an accredited culinary school or equivalent work experience. Previous experience in a management role is preferred including experience in large catering and/or a high-volume kitchen environment
- The ideal candidate is extremely reliable, detail-oriented, and proficient in all basic cooking techniques
- Strong organizational, communication, and computer skills
- A commitment to excellence in customer service, with a customer first mentality is required
- Experience in a high volume, multi-unit operation is preferred
- Expertise with ordering and inventory procedures and health and sanitation guidelines
- Professional, enthusiastic, responsible, and dependable team player
- Self-motivated, takes initiative and willing to learn new skills and processes
- Must obtain or have ServeSafe Certification
- Must be able to work a flexible schedule of days, nights, weekends and holidays (inclusive of special events and all baseball games)
